Omakase Oysters for a large party

Here we are on the oyster course for a large 15 top doing an Omakase from Chef Zama. Top picture is final product, bottom is in production. We call it Oysters 3 ways. We have 3 kushi oysters, 1 served in a lemon with ponzu, 1 in a lime with saoy pickled jalapeno and salt, and the last one is out famous oyster shooter. Kushi Oyster on top of a sake cup, in side is ponzu, scallion and plum wine gelee. The oyster itself has a drop of sriracha. You just slid in to sake cup and swirl and then shoot it. It’s ton’s of fun and taste great!
